Fixes #607

On macOS the GUI now picks the default platform from the libraries the OF package was bundled with (libs/*/lib/..., ignoring openFrameworksCompiled):

bundled libs default platform
lib/macos/*.xcframework with ios-* / tvos-* slices (all Apple platforms) Mega macOS (macos)
macOS only (lib/osx, or xcframeworks with only macos-* slices) macOS (OSX) (osx)
only lib/ios / lib/tvos (iOS nightly package) iOS (ios)
no Apple libs unchanged (host default)

Only applies on a macOS host when the current default is an Apple platform (osx / ios / macos), so it's re-evaluated per launch / package and never overrides a non-Apple choice.

Also: settings that stored the template label (eg "macOS (OSX) (Xcode)") instead of the platform id now fall back to the id, so the dropdown actually selects it.

Tested: detection on mega / osx-only (xcframework and plain lib/osx) / ios+tvos-only / no-apple trees, and in the GUI against a full OF checkout — both platform dropdowns default to Mega macOS.
